  • 8 Corn tortillas
  • 2 tablespoons Olive oil
  • 1 whole, sliced Red bell pepper
  • 1 whole, sliced Zucchini
  • 1 small, sliced Red onion
  • 1 can, drained and rinsed Black beans
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 whole, juiced Lime
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup, chopped Fresh cilantro
  • 1 whole, sliced Avocado
  • 0.5 cup, halved Cherry tomatoes
  • 0.25 cup Crumbled feta or cotija cheese

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add sliced red bell pepper, zucchini, and red onion to the skillet. Sauté for 5-7 minutes until lightly browned and tender.

Step 3

Add the black beans to the vegetable mixture and stir in ground cumin, chili powder, salt, and black pepper. Cook for an additional 3 minutes to heat the beans and blend flavors.

Step 4

In a small bowl, mix the juice of the lime with the remaining 1 tablespoon of olive oil.
