Ingredients

  • 2 tablespoons olive oil
  • 1 pound beef stew meat
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 2 stalks celery, chopped
  • 1 cup green beans, trimmed
  • 14.5 ounces canned diced tomatoes
  • 6 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 0.5 cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large soup pot over medium-high heat.

Step 2

Season the beef stew meat with the salt and black pepper. Add the beef to the pot and sear until browned on all sides, about 5-6 minutes. Remove the beef and set aside.

Step 3

In the same pot, add the onion and garlic. Sauté until the onion is translucent and fragrant, about 3-4 minutes.

Step 4

Stir in the carrots, potatoes, celery, and green beans. Cook for 5 minutes, occasionally stirring.

Step 5

Add the canned diced tomatoes, beef broth, bay leaf, and dried thyme to the pot. Return the seared beef to the pot and bring the mixture to a boil.

Step 6

Reduce the heat to low, cover the pot, and let the soup simmer for 45 minutes, or until the beef and vegetables are tender.

Step 7

Stir in the frozen peas and cook for an additional 5 minutes.

Step 8

Remove the bay leaf, taste the soup, and adjust the seasoning with additional salt and pepper if needed.

Step 9

Garnish with fresh parsley before serving and enjoy your hearty Vegetable Beef Soup!
