Ingredients

  • 1 pound Italian sausage (mild or spicy, casing removed)

  • 3 medium carrots, diced
  • 2 pieces celery stalks, diced
  • 3 pieces garlic cloves, minced
  • 1 medium zucchini, diced
  • 1 medium red bell pepper, diced
  • 1 medium russet potato, diced into 1/2-inch cubes
  • 14.5 ounces diced tomatoes (with juice)
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 cups baby spinach
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat.

Step 2

Add the Italian sausage and cook, breaking it up into small pieces, until browned and fully cooked, about 6-8 minutes. Remove the sausage with a slotted spoon and set it aside, leaving the rendered fat in the pot.

Step 3

Add the olive oil to the pot, then stir in the diced onion, carrots, and celery. Cook for 4-5 minutes, stirring occasionally, until the vegetables begin to soften.
