Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 teaspoon crushed red pepper flakes
  • 6 ounces tomato paste
  • 1 cup vodka
  • 28 ounces canned crushed tomatoes
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 handful fresh basil, chopped
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

Heat the olive oil and butter in a large skillet or saucepan over medium heat until the butter is melted and shimmering.

Step 2

Add the finely chopped onion and sauté for 5-7 minutes, stirring occasionally, until the onion is soft and translucent.

Step 3

Stir in the minced garlic and crushed red pepper flakes, cooking for 1 minute until fragrant.

Step 4

Add the tomato paste and stir well, cooking for 2-3 minutes until the tomato paste darkens slightly.

Step 5

Pour in the vodka and stir to combine, scraping up any bits stuck to the bottom of the pan. Simmer for 3-4 minutes to allow the alcohol to cook off.
