Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoons salt
  • 0.5 cups cold unsalted butter
  • 0.75 cups heavy cream
  • 1 egg
  • 1 teaspoons vanilla extract
  • 0.5 cups optional: raisins, currants, or dried cranberries
  • 2 tablespoons optional: coarse sugar for sprinkling

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Step 3

Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

If you’re adding raisins, currants, or dried cranberries, stir them into the dry mixture at this stage.

Step 5

In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 6

Pour the wet ingredients into the dry ingredients and gently mix until the dough comes together. Avoid overmixing to ensure tender scones.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it a few times to form a smooth ball. Pat the dough into a round disk about 1 inch thick and 6–7 inches in diameter.

Step 8

Use a sharp knife or a bench scraper to cut the dough into 8 triangular wedges. Arrange the wedges on the prepared baking sheet, spacing them about 2 inches apart.

Step 9

If desired, brush the tops of the scones with a little heavy cream and sprinkle with coarse sugar for extra sweetness and crunch.

Step 10

Bake in the preheated oven for 12–15 minutes, or until the scones are golden brown and firm to the touch.

Step 11

Remove from the oven and allow the scones to cool slightly on a wire rack before serving.

Step 12

Enjoy your tea scones warm with clotted cream, butter, or jam!
