Ingredients

  • 3 pounds Beef chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 1 Yellow onion, sliced
  • 4 Garlic cloves, minced
  • 4 Carrots, peeled and cut into chunks
  • 5 Yukon Gold potatoes, quartered
  • 2 cups Beef broth
  • 1 cup Red wine (optional)
  • 2 tablespoons Tomato paste
  • 2 Bay leaves
  • 3 Fresh thyme sprigs

Directions

Step 1

Season the beef chuck roast on all sides with salt and ground black pepper.

Step 2

Heat a large skillet or pan over medium-high heat and add olive oil. Once the oil is hot, sear the beef roast on all sides until browned (about 4 minutes per side). Remove the roast and set aside.

In the same skillet, add the sliced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

Transfer the seared beef, sautéed onions, and garlic to a slow cooker.
