Ingredients

  • 16 oz fettuccine pasta
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic cloves
  • 12 oz cremini mushrooms
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg
  • 2 tbsp chopped fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to package instructions until al dente, then drain and set aside.

Step 2

Meanwhile, clean and slice the cremini mushrooms into thin slices. Mince the garlic cloves.

Step 3

In a large skillet, melt 2 tablespoons of unsalted butter and 1 tablespoon of olive oil over medium heat.

Step 4

Add the sliced mushrooms to the skillet and sauté for 5–7 minutes, or until the mushrooms are golden brown and tender. Remove the mushrooms from the skillet and set aside.

Step 5

In the same skillet, melt the remaining 2 tablespoons of unsalted butter. Add the minced garlic and cook for 1–2 minutes until fragrant, stirring constantly to avoid burning.

Step 6

Lower the heat to medium-low and pour in the heavy cream. Stir gently and let it come to a simmer.

Step 7

Mix in the grated Parmesan cheese, stirring until smooth and well incorporated.

Step 8

Season the sauce with salt, black pepper, and freshly grated nutmeg. Taste and adjust seasoning if needed.

Step 9

Return the sautéed mushrooms to the skillet and mix them into the sauce. Let the sauce cook for 2–3 minutes to blend the flavors.

Step 10

Add the drained fettuccine pasta to the skillet and toss to coat the noodles evenly in the sauce.

Step 11

Garnish with chopped fresh parsley before serving. Serve warm and enjoy your delicious Mushroom Alfredo!
