Ingredients

  • 4 whole (medium-sized) Plums
  • 4 whole (medium-sized) Pluots
  • 1 tablespoon (grated) Fresh ginger
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Honey
  • 1 tablespoon (freshly squeezed) Lemon juice
  • 1 cup Water
  • 0.25 teaspoon Ground cinnamon
  • 1 pinch Salt

Directions

Step 1

Wash and pit the plums and pluots, then cut them into quarters. Set aside.

Step 2

In a medium-sized saucepan, combine water, granulated sugar, honey, and grated fresh ginger. Stir over medium heat until the sugar dissolves completely, about 2-3 minutes.

Step 3

Add the lemon juice, ground cinnamon, and a pinch of salt to the saucepan. Stir to combine.

Step 4

Add the plum and pluot slices to the saucepan, ensuring they are evenly coated in the liquid. Reduce the heat to low and cover the pan with a lid.

Step 5

Simmer the mixture gently for 15-20 minutes, stirring occasionally, until the fruit is tender but still holds its shape. Taste and adjust sweetness if necessary by adding more honey or sugar.

Step 6

Remove the saucepan from heat and allow the compote to cool slightly. The compote will thicken as it cools.

Step 7

Serve the compote warm, at room temperature, or chilled. It pairs wonderfully with yogurt, ice cream, pancakes, waffles, or even as a topping for pound cake.
