Ingredients

  • 2 cups Broccoli florets
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 1 medium Zucchini
  • 3 tablespoons Olive oil
  • 2 small Garlic cloves, minced
  • 3 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Parsley, chopped (optional garnish)

Directions

Step 1

Wash and prepare the vegetables: cut broccoli into bite-sized florets, slice carrots into thin rounds, slice the red bell pepper into strips, and cut the zucchini into half-moons.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and cook for about 1 minute until fragrant, stirring frequently to avoid burning.

Step 4

Add the carrots to the skillet and cook for 3 minutes, stirring occasionally.

Step 5

Add the broccoli florets, red bell pepper, and zucchini to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.

Step 6

In a small bowl, whisk together the lemon juice, remaining 1 tablespoon of olive oil, lemon zest, black pepper, and salt.

Step 7

Pour the lemon mixture over the cooked vegetables and toss well to combine.

Step 8

Cook for an additional 2 minutes to allow the vegetables to absorb the flavors.

Step 9

Remove the skillet from the heat and transfer the vegetables to a serving dish.

Step 10

Optional: Garnish with freshly chopped parsley for a pop of color and added freshness.

Step 11

Serve warm as a side dish or enjoy as a standalone meal!
