Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 1 medium green bell pepper
  • 2 medium carrot
  • 3 units garlic cloves
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 14.5 oz (1 can) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup frozen peas
  • 2 tbsp (chopped) fresh parsley
  • 2 cups cooked rice (optional, for serving)

Directions

Step 1

Peel and finely dice the onion. Core and dice the green bell pepper. Peel and dice the carrots into small cubes. Mince the garlic cloves.

Step 2

In a large skillet or pan, heat the olive oil over medium heat.

Step 3

Add the diced onion, bell pepper, and carrots to the pan. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

Step 4

Push the vegetables to the side of the pan, increase the heat to medium-high, and add the ground beef to the center. Cook the beef for 5-6 minutes, breaking it up with a wooden spoon, until it’s browned.
