  • 500 g potatoes
  • 400 g white fish fillets (cod, haddock, or any flaky white fish)
  • 2 tbsp butter
  • 50 ml milk
  • 1 tsp lemon zest
  • 2 tbsp parsley, finely chopped
  • 0.5 tsp freshly ground black pepper
  • 0.5 tsp salt
  • 2 large eggs
  • 1.5 cups breadcrumbs
  • 4 tbsp vegetable oil (for frying)

Directions

Step 1

Peel and chop the potatoes into even chunks. Place them in a pot of salted water and boil for 15-20 minutes, or until soft. Drain and mash with 2 tablespoons of butter and the milk until smooth. Let cool slightly.

Step 2

While the potatoes cook, poach the fish. Place the fish fillets in a shallow pan, cover with water, and simmer gently for 5-7 minutes, or until the fish flakes easily. Drain and flake the fish, removing any skin or bones. Let cool slightly.

In a large mixing bowl, combine the mashed potatoes, flaked fish, lemon zest, parsley, salt, and black pepper. Mix until evenly combined.
