Ingredients

  • 2 cups Eggnog
  • 0.5 cups Whole milk
  • 0.25 cups Granulated sugar
  • 3 tablespoons Cornstarch
  • 2 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Ground nutmeg
  • 2 tablespoons Unsalted butter
  • 1 cup Whipped cream
  • 1 dash Optional garnish: additional ground nutmeg or cinnamon stick

Directions

Step 1

In a medium saucepan, combine eggnog, whole milk, and granulated sugar. Whisk gently to mix, and place the saucepan over medium heat.

Step 2

In a small bowl, whisk cornstarch and egg yolks until smooth and creamy. Set aside.

Step 3

Once the eggnog mixture in the saucepan warms up (but does not boil), slowly add a ladleful of the warm liquid into the egg yolk and cornstarch mixture. Whisk continuously to temper the eggs and prevent curdling.

Step 4

Pour the tempered egg yolk mixture back into the saucepan while whisking continually. Reduce heat to medium-low.

Continue to cook the mixture, stirring constantly, until it thickens into a pudding-like consistency. This should take about 5-7 minutes. Be sure not to let the mixture boil to avoid splitting.

Remove the saucepan from heat. Stir in vanilla extract, ground nutmeg, and unsalted butter until fully incorporated and smooth.
