Ingredients

  • 1 lb Ground beef (or lamb)
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, diced
  • 1 cup Frozen peas
  • 2 cloves Garlic, minced
  • 1 cup Beef broth
  • 2 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Flour
  • 4 tbsp Butter
  • 4 large Russet potatoes, peeled and cubed
  • 0.5 cup Milk
  • 0.5 cup Cheddar cheese, shredded
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Boil the peeled and cubed potatoes in a large pot of salted water for 15-20 minutes, or until fork-tender.

Step 3

While the potatoes cook, heat olive oil in a large skillet over medium-high heat. Add the ground beef (or lamb), breaking it up with a wooden spoon, and cook until browned. Drain excess fat if needed.

Step 4

Add the diced onion, carrots, and minced garlic to the skillet. Cook for 5-7 minutes, or until softened.

Step 5

Stir in the flour and cook for 1-2 minutes. Then add the tomato paste, Worcestershire sauce, and beef broth. Stir until a thick gravy forms.

Step 6

Add the frozen peas to the skillet, stir to combine, and simmer for 5 minutes. Season the mixture with salt and black pepper to taste, then remove from heat.

Step 7

Drain the cooked potatoes and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt to taste.

Step 8

Spread the meat mixture evenly into the bottom of a 9x13 inch baking dish. Top with the mashed potatoes, smoothing them out with a spatula.

Step 9

Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.

Step 10

Bake in the preheated oven for 20 minutes, or until bubbly and golden on top.

Step 11

Let the shepherd's pie cool for 5 minutes before serving.
