  • 1 13.5-ounce can Canned coconut milk, unsweetened
  • 1 cup Low-sodium chicken broth
  • 3 tablespoons Tomato paste
  • 0.5 cup Dried currants
  • 3 cups Baby spinach
  • 0.25 cup Fresh cilantro, chopped
  • 4 cups Cooked basmati rice (for serving)

Directions

Step 1

Cut the turkey breast into bite-sized chunks and set aside.
