  • 4 cups fresh corn kernels (or frozen, thawed)
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon smoked paprika
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 4 slices crisp-cooked bacon, crumbled (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat the butter and olive oil over medium heat until the butter is melted.

Step 2

Add the diced onion, garlic, celery, and carrot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are soft and the onion is translucent.

Step 3

Stir in the diced potatoes and cook for another 2 minutes.
