Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 4 pieces Garlic cloves, minced
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 1 teaspoon Dried Italian seasoning
  • 12 ounces Fettuccine pasta
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Season the chicken breasts with half the salt and half the black pepper on both sides.

Step 2

Heat a large skillet over medium-high heat and add the olive oil.

Step 3

Add the chicken breasts to the skillet and cook for 5-7 minutes on each side, or until golden brown and fully cooked to an internal temperature of 165°F (74°C). Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 5

Pour in the chicken broth and scrape the bottom of the skillet to deglaze, releasing any browned bits.

Step 6

Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Simmer gently for 5 minutes, stirring frequently, until the sauce thickens slightly.

Step 7

Cook the fettuccine pasta according to the package instructions. Reserve 1/2 cup of pasta water before draining.

Step 8

Slice the cooked chicken into strips or bite-sized pieces.

Step 9

Add the cooked pasta to the skillet with the sauce, tossing to coat. If the sauce is too thick, add the reserved pasta water a little at a time to reach the desired consistency.

Step 10

Add the sliced chicken to the skillet and toss to combine.

Step 11

Taste and adjust seasoning with the remaining salt and pepper, if needed.

Step 12

Serve immediately, garnished with fresh parsley, if desired.
