Cook the lasagna noodles according to the package instructions. Once cooked, drain and lay them flat on a sheet of parchment paper to prevent sticking.
In a medium saucepan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1–2 minutes.
Add the butter to the garlic and melt completely. Then, whisk in the flour and cook for 1–2 minutes to form a roux.
Gradually pour in the milk while whisking constantly to avoid lumps. Stir in the Italian seasoning, 1 teaspoon of salt, and black pepper. Cook until the sauce thickens, about 5–7 minutes.
In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, 1/2 cup of Parmesan cheese, and 1 teaspoon of salt. Mix thoroughly.
Spread a thin layer of the white sauce evenly over the bottom of a 9x13-inch baking dish.
Place 3 lasagna noodles lengthwise in the baking dish. Spread a layer of the chicken mixture on top of the noodles, followed by a drizzle of white sauce.
Repeat the layering process (noodles, chicken mixture, white sauce) until all the ingredients are used, finishing with a layer of white sauce on top.
Sprinkle the remaining 2 cups of mozzarella cheese and 1/2 cup of Parmesan cheese evenly over the top layer.
Cover the baking dish with aluminum foil (to prevent the cheese from browning too quickly) and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 15–20 minutes, or until the cheese is bubbly and golden brown.
Allow the lasagna to cool for 10–15 minutes before slicing and serving.
