Ingredients

  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.5 teaspoons Salt
  • 0.5 cups Granulated sugar
  • 0.5 cups Brown sugar
  • 0.5 cups Vegetable oil
  • 0.25 cups Plain Greek yogurt
  • 2 pieces Large eggs
  • 1 teaspoons Vanilla extract
  • 1.5 cups Grated carrots
  • 0.5 cups Chopped walnuts or pecans (optional)
  • 0.25 cups Raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a standard 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined. Set aside.

Step 3

In another bowl, whisk together the granulated sugar, brown sugar, vegetable oil, Greek yogurt, eggs, and vanilla extract until the mixture is smooth and creamy.

Step 4

Gradually fold the wet ingredients into the dry ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are fine.

Step 5

Fold in the grated carrots, ensuring they are evenly distributed throughout the batter. If using, gently stir in the chopped walnuts or pecans and raisins.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 20-22 minutes or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs attached.

Step 8

Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Enjoy the muffins warm, or store them in an airtight container at room temperature for up to 3 days.
