Ingredients

  • 2 medium aubergines (eggplants)
  • 3 tablespoons vegetable oil

  • 400 grams canned tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 0.5 teaspoon red chili powder
  • 1 teaspoon salt
  • 2 tablespoons, chopped fresh cilantro leaves
  • 1 tablespoon lemon juice

Directions

Step 1

Cut the aubergines into bite-sized cubes.

Step 2

Heat 2 tablespoons of vegetable oil in a large pan over medium heat.

Add the aubergine cubes and sauté until they are soft and golden brown, about 10 minutes. Remove and set aside.
