Ingredients

  • 12 oz Rotini pasta
  • 1.5 cups Cherry tomatoes
  • 1 large Cucumber
  • 1 large Red bell pepper
  • 0.75 cups Sliced black olives
  • 0.5 medium Red onion
  • 1 cup Hard salami (cut into cubes)
  • 1 cup Provolone cheese (cut into cubes)
  • 2 tbsp Fresh parsley (chopped)
  • 0.5 cups Olive oil
  • 0.25 cups Red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp Honey
  • 1 clove Garlic (minced)
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cook the rotini pasta in a large pot of salted boiling water according to the package instructions, until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

Step 2

While the pasta cools, prepare the vegetables. Slice the cherry tomatoes in half, dice the cucumber and red bell pepper into small pieces, and thinly slice the red onion. Set all veggies aside.

Step 3

In a large mixing bowl, combine the cooked and cooled pasta with the prepared vegetables, black olives, hard salami cubes, and provolone cheese cubes.

Step 4

To make the dressing, whisk together olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, dried oregano, salt, and black pepper in a small bowl until emulsified.

Pour the dressing over the pasta mixture and toss gently to coat everything evenly.
