Ingredients

  • 450 grams Elbow macaroni
  • 240 milliliters Mayonnaise
  • 120 milliliters Sour cream
  • 15 milliliters White vinegar
  • 15 milliliters Dijon mustard
  • 15 grams Granulated sugar
  • 5 grams Salt
  • 5 grams Black pepper
  • 120 grams Celery, finely diced
  • 100 grams Red bell pepper, finely diced
  • 60 grams Carrot, grated
  • 60 grams Red onion, finely diced
  • 15 grams Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil, then add the elbow macaroni. Cook according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside to cool completely.

Step 2

In a large mixing bowl, whisk together the mayonnaise, sour cream, white vinegar, Dijon mustard, sugar, salt, and black pepper until smooth and well combined.

Step 3

Add the cooled macaroni to the bowl of dressing and toss gently to coat the pasta evenly.

Step 4

Fold in the celery, red bell pepper, grated carrot, red onion, and parsley. Mix until all ingredients are evenly distributed.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to let the flavors meld together.

Step 6

Before serving, give the macaroni salad a gentle stir and adjust seasoning with additional salt or pepper if needed.

Step 7

Serve chilled as a side dish or light main course. Enjoy!
