Ingredients

  • 3 pounds pork spare ribs
  • 1 cup apricot preserves
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup water
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Remove the membrane from the back of the pork spare ribs for better flavor and tenderness. Pat the ribs dry with paper towels.

Step 3

In a small bowl, mix garlic powder, smoked paprika, black pepper, and salt. Rub this spice mixture evenly over both sides of the ribs.

Step 4

Heat olive oil in a large skillet over medium-high heat. Sear the ribs for 2-3 minutes per side until golden brown. This step locks in the flavor and provides a nice crust.

Step 5

In a medium saucepan over medium heat, combine apricot preserves, soy sauce, apple cider vinegar, brown sugar, and water. Stir well and let the mixture simmer for 5 minutes, until slightly thickened. Remove from heat.

Step 6

Place the seared ribs in a large roasting pan or a foil-lined baking sheet. Brush a generous amount of the apricot glaze over the ribs, coating them completely.

Step 7

Cover the pan tightly with aluminum foil to seal in moisture, and roast in the preheated oven for 2½ hours, basting with more apricot glaze every 30 minutes.

Step 8

After 2½ hours, increase the oven temperature to 375°F (190°C). Remove the foil and brush the ribs with another layer of glaze.

Step 9

Return the ribs to the oven uncovered and bake for an additional 20-30 minutes, or until the glaze is caramelized and sticky.

Step 10

Remove the ribs from the oven and let them rest for 10 minutes. Slice into portions and serve with extra glaze on the side if desired. Enjoy!
