Ingredients

  • 1 approximately 3-4 pounds Whole chicken
  • 10 cups Water
  • 2 large, chopped Carrots
  • 2 stalks, chopped Celery
  • 1 medium, chopped Onion
  • 2 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 cups All-purpose flour
  • 0.25 cups Shortening
  • 0.5 cups Cold water
  • 1 cup Chicken broth (optional, for thinning if needed)

Directions

Step 1

Place the whole chicken in a large pot and add 10 cups of water. Bring to a boil over medium-high heat, and then reduce the heat to medium-low.

Step 2

Skim off any foam that rises to the top. Add the chopped carrots, celery, onion, salt, and black pepper to the pot. Cover and simmer for about 1 hour, or until the chicken is cooked through and tender.

Step 3

Carefully remove the chicken from the pot and set it aside to cool slightly. Strain the broth to remove any solids, then return the broth to the pot and keep it warm over low heat.

Step 4

Once the chicken is cool enough to handle, remove the meat from the bones and shred it into bite-sized pieces. Discard the bones and skin. Set the chicken meat aside.

Step 5

To make the dumplings, combine the flour and a pinch of salt in a large bowl. Cut in the shortening using a pastry blender or fork until the mixture resembles coarse crumbs.

Step 6

Gradually add the cold water to the flour mixture, stirring just until the dough comes together. Be careful not to overwork the dough.

Step 7

On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Cut the dough into 2-inch squares using a knife or pastry cutter.

Step 8

Bring the broth to a gentle boil. Drop the dumpling squares into the broth one at a time, stirring occasionally to prevent sticking. Let the dumplings cook for 10-12 minutes, or until tender and slightly translucent.

Step 9

Add the shredded chicken back to the pot with the dumplings. Stir gently to combine and continue cooking for 5 minutes, until the chicken is heated through.

Step 10

Taste and adjust the seasoning with additional salt and pepper, if needed. If the broth is too thick, you can thin it with a little extra chicken broth.

Step 11

Serve hot in bowls, ladling the dumplings and chicken with plenty of broth. Enjoy your Delaware Slippery Dumplings!
