Ingredients

  • 2 pieces Chicken breast (boneless, skinless)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 4 pieces Large flour tortillas
  • 2 cups Shredded Mexican blend cheese
  • 1 medium Bell pepper (any color, diced)
  • 1 small Red onion (diced)
  • 2 tablespoons Fresh cilantro (chopped)
  • 0.5 cup Sour cream (optional, for serving)
  • 0.5 cup Salsa (optional, for serving)

Directions

Step 1

Season the chicken breasts with salt, black pepper, smoked paprika, ground cumin, and garlic powder, ensuring they are evenly coated.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for 4-5 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and let it rest for 5 minutes before dicing into small pieces.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced bell pepper and red onion for 3-4 minutes until they are softened. Remove from heat and set aside.

Step 4

Lay out the flour tortillas on a clean surface. On half of each tortilla, evenly distribute a layer of shredded cheese, followed by diced chicken, sautéed vegetables, and a sprinkle of fresh cilantro. Top with another layer of shredded cheese.

Step 5

Fold the other half of each tortilla over the filling to create a semicircle shape.

Step 6

Heat a clean, dry skillet over medium heat. Cook each quesadilla for 2-3 minutes per side, or until the tortilla is golden and crispy and the cheese has melted.

Step 7

Remove the quesadilla from the skillet and let it rest for 1-2 minutes before slicing into wedges.

Step 8

Serve the quesadillas warm with sour cream and salsa on the side for dipping, if desired.
