Ingredients

  • 4 cups Cooked jasmine rice
  • 3 large Eggs
  • 1 cup (cooked and diced) Chicken breast
  • 1 cup Frozen peas and carrots mix
  • 3 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 3 cloves (minced) Garlic
  • 3 stalks (sliced) Green onions
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by making sure your jasmine rice is cold. If freshly cooked, spread it out on a tray and let it cool completely.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.

Step 3

Crack the eggs into the pan and lightly scramble them until just set. Remove from the pan and set aside.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the pan. Once hot, add the minced garlic and sauté for 30 seconds, until fragrant.

Step 5

Increase the heat to medium-high. Add the diced chicken breast to the pan and cook until heated through, about 2 minutes.

Step 6

Add the frozen peas and carrots mix, stirring frequently until they are warm and evenly distributed, about 3 minutes.
