Ingredients

  • 2 large Eggs
  • 1 tablespoon Milk
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 2 tablespoons Butter
  • 2 Slices of bread
  • 2 slices Bacon
  • 2 slices Cheddar cheese
  • 1 tablespoon Mayonnaise
  • 1 handful Fresh spinach (optional)

Directions

Step 1

Heat a non-stick skillet over medium heat and cook the bacon slices until crispy. Remove the bacon and set it aside on a paper towel-lined plate to drain excess grease.

Step 2

In a small bowl, whisk together the eggs, milk, salt, and black pepper until combined.

Step 3

Wipe the skillet clean and place it back over medium heat. Melt 1 tablespoon of butter and pour in the egg mixture. Scramble the eggs gently until they are just cooked through, then remove from the heat.

Step 4

Spread a thin layer of mayonnaise on one side of each slice of bread.

Step 5

Assemble the sandwich by layering scrambled eggs, crispy bacon, cheddar cheese, and optional fresh spinach between the slices of bread, with the mayonnaise side facing out.

Step 6

Melt the remaining tablespoon of butter in the skillet over medium heat. Place the assembled sandwich in the skillet and cook for 2-3 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.

Step 7

Remove the sandwich from the skillet, cut it in half, and serve immediately.
