Ingredients

  • 2 pounds venison (ground or finely chopped)
  • 1 pound pork shoulder (ground)
  • 2.5 cups yellow cornmeal
  • 6 cups water
  • 1 medium white onion (finely diced)
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground sage
  • 0.5 teaspoon ground thyme
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup all-purpose flour (for dusting)
  • 2 tablespoons oil or butter (for frying)

Directions

Step 1

In a large pot, combine the ground venison, ground pork, and 6 cups of water. Bring the mixture to a boil over medium heat, stirring occasionally.

Step 2

Reduce the heat to low and simmer for about 1 hour, skimming off any foam or impurities that rise to the surface.

Step 3

Add the finely diced onion, salt, black pepper, sage, thyme, and nutmeg to the pot. Stir well to incorporate the spices.

Step 4

Slowly add the cornmeal to the pot while continuously stirring to prevent clumping. Continue stirring until the mixture thickens to a porridge-like consistency.

Step 5

Simmer on low heat for another 40-50 minutes, stirring occasionally to keep the mixture from sticking to the bottom of the pot. The mixture should become thick and cohesive.

Step 6

Grease a 9x5-inch loaf pan (or similar) with oil or butter and carefully pour the scrapple mixture into the pan. Smooth the top with a spatula.

Step 7

Let the scrapple cool to room temperature, then cover and refrigerate for at least 4 hours or overnight to set.

Step 8

Once the scrapple is fully set, turn it out of the loaf pan onto a cutting board and slice it into 1/2-inch thick pieces.

Step 9

Dust each slice lightly with all-purpose flour on both sides.

Step 10

Heat oil or butter in a skillet over medium heat. Fry the scrapple slices for 3-4 minutes on each side, or until golden brown and crispy.

Step 11

Serve hot with eggs, toast, or your favorite breakfast accompaniments. Enjoy your homemade Deerhunter's Scrapple!
