Ingredients

  • 1.5 pounds ground deer meat
  • 0.5 pounds ground pork
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 1 piece large egg
  • 1 medium, finely diced yellow onion
  • 3 cloves, minced garlic
  • 0.5 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup ketchup (for topping)
  • 1 tablespoon brown sugar
  • 1 teaspoon apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a standard loaf pan or line it with parchment paper.

Step 2

In a small mixing bowl, combine breadcrumbs and milk. Let the mixture sit for about 5 minutes to allow the breadcrumbs to soak up the liquid.

Step 3

In a large mixing bowl, combine the ground deer meat and ground pork. Add the soaked breadcrumbs, egg, diced onion, minced garlic, 1/2 cup of ketchup, Worcestershire sauce, dried thyme, paprika, salt, and black pepper.

Step 4

Mix the ingredients thoroughly using your hands or a sturdy spatula until well combined, but avoid overmixing as this can lead to a dense meatloaf.

Step 5

Transfer the meat mixture into the prepared loaf pan and press it down gently, shaping it into an even loaf.

Step 6

In a small bowl, mix 1/4 cup of ketchup, brown sugar, and apple cider vinegar to create the glaze.

Step 7

Spread the glaze evenly over the top of the meatloaf, covering it completely for a flavorful crust.

Step 8

Bake the meatloaf in the preheated oven for approximately 60 minutes, or until the internal temperature reaches 160°F (71°C) when tested with a meat thermometer.

Step 9

Once cooked, remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing and serving.

Step 10

Serve warm with mashed potatoes, roasted vegetables, or your favorite side dishes.
