Directions

Step 1

Peel and dice the potatoes into small, bite-sized cubes. Set aside.

Dice the onion and bell pepper, and mince the garlic cloves.

Place a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the vegetable oil and heat until shimmering.
