  • 1 large yellow onion
  • 3 whole garlic cloves

  • 1 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 cup breadcrumbs
  • 4 tablespoons unsalted butter
  • 1.5 cups shredded sharp cheddar cheese
  • 0.5 cup Parmesan cheese
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x9-inch casserole dish with olive oil or butter.

Step 2

Slice the tomatoes into 1/4-inch thick rounds and set aside. Finely chop the onion and mince the garlic.

Step 3

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Stir in the minced garlic and cook for another 1-2 minutes, until fragrant. Remove from heat.
