Ingredients

  • 2.5 lbs Chicken pieces (drumsticks, thighs, wings, or breasts)
  • 2 cups Buttermilk
  • 2 tbsp Hot sauce
  • 2.5 cups All-purpose flour
  • 0.25 cup Cornstarch
  • 2 tsp Paprika
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 1 tsp Cayenne pepper
  • 1 tsp Dried thyme
  • 1 tsp Dried oregano
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 4 cups Vegetable oil

Directions

Step 1

In a large bowl or zip-top bag, combine buttermilk and hot sauce.

Step 2

Add the chicken pieces to the buttermilk mixture, ensuring they are fully submerged. Cover/seal and refrigerate for at least 4 hours or overnight for best results.

Step 3

In a separate large mixing bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper.

Step 4

Remove the chicken pieces from the buttermilk mixture, allowing excess liquid to drip off. Dredge each piece in the seasoned flour mixture, pressing firmly to ensure a thick and even coating. Place coated chicken pieces on a wire rack and let them rest for 10-15 minutes.

Step 5

In a deep, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Ensure the oil is deep enough to fully submerge the chicken.

Step 6

Working in batches to avoid overcrowding, carefully lower the chicken pieces into the hot oil. Fry for 12-15 minutes for larger pieces and 8-10 minutes for smaller ones, turning occasionally, until the chicken is golden brown and the internal temperature reaches 165°F (74°C).

Step 7

Transfer the fried chicken to a clean wire rack set over a baking sheet to allow excess oil to drain. Do not place on paper towels to prevent sogginess.

Step 8

Let the chicken rest for 5 minutes before serving. Serve hot with your favorite sides like coleslaw, cornbread, or macaroni and cheese.
