Ingredients

  • 4 large Russet potatoes
  • 2 liters Vegetable oil (for frying)
  • 1 teaspoon Salt
  • 1 large bowl Ice water

Directions

Step 1

Peel the russet potatoes and cut them into evenly sized sticks, about 1/4-inch thick.

Step 2

Place the potato sticks in a large bowl of ice water and let them soak for at least 20 minutes. This removes excess starch and helps them crisp up during frying.

Step 3

Drain the potatoes and pat them completely dry with a clean kitchen towel or paper towels.

Step 4

In a heavy-bottomed pot or deep fryer, heat the vegetable oil to 325°F (160°C). Use a thermometer to ensure accurate temperature control.

Step 5

Working in small batches, fry the potatoes for 3-4 minutes or until they are just softened but not browned. Remove with a slotted spoon and place them on a baking sheet lined with paper towels to drain. Allow them to cool completely.

Step 6

Increase the oil temperature to 375°F (190°C) for the second fry.

Step 7

Again working in small batches, fry the potatoes a second time for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place them on fresh paper towels to drain excess oil.

Step 8

Immediately sprinkle the hot fries with salt while they are still warm.

Step 9

Serve the french fries fresh and hot, optionally paired with ketchup, mayonnaise, or your favorite dipping sauce.
