Ingredients

  • 3 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1 tablespoon Granulated sugar
  • 1.5 teaspoons Salt
  • 2 tablespoons Olive oil
  • 1 cup Warm water
  • 6 cups Fresh spinach
  • 1 cup Ricotta cheese
  • 2 cups Mozzarella cheese
  • 0.5 cups Parmesan cheese
  • 1 large Egg
  • 1 can (28 ounces) Crushed tomatoes
  • 2 cloves Garlic
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.25 teaspoons Crushed red pepper flakes
  • 1 tablespoon Butter (for greasing the pan)

Directions

Step 1

In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.

Step 2

Add flour, salt, and olive oil to the bowl. Mix until a dough forms, then knead on a floured surface for about 8 minutes until smooth and elastic.

Step 3

Place the dough in a greased bowl, cover with a cloth, and let rise in a warm spot for 1 to 1.5 hours or until doubled in size.

Step 4

Preheat your oven to 425°F (220°C) and grease a deep-dish pizza pan with butter.

Step 5

In a medium skillet, cook the spinach over medium heat until wilted. Remove from heat, let cool slightly, and squeeze out any excess moisture.

Step 6

In a bowl, mix together ricotta, 1 cup of mozzarella, Parmesan, egg, and the cooked spinach. Set aside.

Step 7

In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Step 8

Add crushed tomatoes, oregano, basil, and red pepper flakes to the saucepan. Simmer for 10 minutes, stirring occasionally. Remove from heat.

Step 9

Punch the dough down and roll it out into a circle about 14 inches in diameter. Fit it into the greased pan, ensuring the edges come up the sides of the pan.

Step 10

Spread half of the tomato sauce onto the base of the dough.

Step 11

Layer the spinach and ricotta mixture over the sauce evenly.

Step 12

Top with the remaining 1 cup of mozzarella cheese.

Step 13

Pour the remaining tomato sauce over the top, spreading evenly.

Step 14

Bake in the preheated oven for 40 to 45 minutes, or until the crust is golden brown and the filling is bubbling.

Step 15

Let the pizza cool for about 10 minutes before slicing and serving. Enjoy your Deep Dish Florentine Pizza!
