Ingredients

  • 3.5 cups All-purpose flour
  • 0.25 cups Granulated sugar
  • 1 teaspoons Salt
  • 1.5 cups Unsalted butter (cold, cubed)
  • 0.5 cups Ice water
  • 10 large Apples (Granny Smith or Honeycrisp, peeled, cored, and sliced thinly)
  • 0.75 cups Brown sugar
  • 0.25 cups Granulated sugar
  • 2 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 3 tablespoons All-purpose flour (for thickening the filling)
  • 2 tablespoons Lemon juice
  • 1 large Egg (for egg wash)
  • 1 tablespoons Milk (for egg wash)

Directions

Step 1

In a large bowl, mix 3.5 cups of all-purpose flour, 0.25 cups of granulated sugar, and 1 teaspoon of salt.

Step 2

Add 1.5 cups of cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.

Step 3

Gradually add 0.5 cups of ice water, 1 tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

Preheat your oven to 375°F (190°C). Grease a deep 9-inch pie dish.

Step 5

In another large bowl, toss the thinly sliced apples with 0.75 cups of brown sugar, 0.25 cups of granulated sugar, 2 teaspoons of cinnamon, 0.25 teaspoons of nutmeg, 3 tablespoons of flour, and 2 tablespoons of lemon juice. Set aside to let the juices release.

Step 6

On a floured surface, roll out one of the chilled dough discs into a large circle, about 12 inches in diameter. Carefully transfer it to the pie dish, pressing it gently into the corners and allowing the excess to hang over the edges.

Step 7

Fill the crust evenly with the apple mixture, mounding it high in the center.

Step 8

Roll out the second dough disc into a 12-inch circle and place it over the apples. Trim any excess dough, leaving about 1-inch overhang, then fold the top crust under the bottom crust and crimp the edges to seal.

Step 9

Cut a few slits in the top crust to allow steam to escape.

Step 10

In a small bowl, whisk together 1 egg and 1 tablespoon of milk to make an egg wash. Brush the egg wash over the top crust for a golden finish.

Step 11

Place the pie on a baking sheet to catch any overflow and bake for 70–75 minutes, or until the crust is golden brown and the filling is bubbling.

Step 12

Remove the pie from the oven and let it cool for at least 2 hours before serving to allow the filling to set.

Step 13

Slice and enjoy your Deep Dish Apple Pie Really Deep with a scoop of vanilla ice cream, if desired!
