Ingredients

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 0.75 cup Granulated sugar
  • 0.5 cup Unsweetened cocoa powder
  • 4 oz Dark chocolate (70% cocoa or more), chopped
  • 4 large Egg yolks
  • 2 tsp Vanilla extract
  • 0.25 tsp Salt

Directions

Step 1

In a medium saucepan, combine the heavy cream, whole milk, and cocoa powder. Whisk until the cocoa powder is fully incorporated. Heat over medium heat, stirring occasionally, until the mixture begins to steam (do not boil).

Step 2

Add the chopped dark chocolate to the steaming mixture. Whisk until the chocolate is fully melted and the mixture is smooth. Remove the saucepan from the heat.

Step 3

In a separate medium bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.

Step 4

Slowly pour about 1/2 cup of the warm chocolate mixture into the egg yolk mixture while constantly whisking to temper the eggs. Gradually add the rest of the chocolate mixture to the eggs, whisking continuously.

Step 5

Return the combined mixture to the saucepan and place it over low heat. Stir constantly with a wooden spoon or heatproof spatula until the mixture thickens enough to coat the back of the spoon (170-175°F on a candy thermometer). Do not let it boil.

Remove from heat and stir in the vanilla extract and salt. Pour the custard through a fine-mesh sieve into a clean bowl to remove any lumps.

Allow the mixture to cool to room temperature, then cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours or overnight until completely chilled.
