Ingredients

  • 4 tbsp butter
  • 1 medium, diced onion
  • 2 stalks, diced celery
  • 2 medium, diced carrots
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 3/4 cup milk
  • 3 cups, shredded or diced cooked turkey
  • 1 cup frozen peas
  • 1 tsp, dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 sheets refrigerated pie crusts
  • 1 large, beaten egg

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

In a large skillet, melt the butter over medium heat. Add the diced onion, celery, and carrots. Cook until the vegetables are softened, about 5-7 minutes.

Step 3

Stir in the all-purpose flour, cooking for 1-2 minutes to form a paste and eliminate the raw taste of the flour.

Step 4

Slowly whisk in the chicken broth and milk, stirring constantly to avoid lumps. Cook for 4-5 minutes until the mixture thickens into a creamy sauce.

Step 5

Add the cooked turkey, frozen peas, dried thyme, black pepper, and salt to the skillet. Stir to combine, then remove from heat.

Step 6

Roll out one pie crust sheet and press it into a 9-inch pie dish. Trim any overhanging edges.

Step 7

Pour the turkey-vegetable mixture into the pie crust, spreading it out evenly.

Step 8

Roll out the second pie crust sheet and place it over the filling. Trim and crimp the edges to seal. Use a sharp knife to cut small slits in the top crust for ventilation.

Step 9

Brush the top crust with the beaten egg to give it a golden, shiny finish.

Step 10

Place the pie on a baking sheet to catch any drips and bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.

Step 11

Let the pot pie cool for 10 minutes before slicing and serving. Enjoy!
