Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 cups chicken broth (or vegetable broth for vegetarian version)
  • 1 teaspoon salt
  • 0.5 teaspoons ground cumin
  • 0.5 teaspoons paprika
  • 0.5 cup diced tomatoes (optional)
  • 2 tablespoons fresh cilantro, chopped (optional garnish)

Directions

Step 1

Heat a medium-sized skillet or saucepan over medium heat, then add the vegetable oil.

Step 2

Once the oil is hot, add the long-grain white rice. Stir and toast the rice for 3-4 minutes, until it turns a light golden brown. Be sure to stir frequently to avoid burning.

Step 3

Add the chopped onion to the pan and cook for 2-3 minutes, until softened. Then, add the minced garlic and sauté for an additional 30 seconds, until fragrant.

Step 4

Stir in the tomato sauce, chicken broth, salt, ground cumin, and paprika. If using diced tomatoes, add them at this step as well. Mix thoroughly to combine.

Step 5

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pan with a tight-fitting lid and let the rice simmer for 18-20 minutes, or until the liquid has been fully absorbed and the rice is tender.

Step 6

Remove the pan from heat and let the rice sit, covered, for 5 minutes to allow any remaining steam to evenly finish cooking the rice.

Step 7

Fluff the rice with a fork, garnish with fresh chopped cilantro if desired, and serve warm. Enjoy!
