Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 2 large garlic cloves, minced
  • 1 pound ground lamb (or ground beef)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large russet potatoes, peeled and diced
  • 4 tablespoons butter
  • 0.5 cup milk
  • 0.25 cup grated Parmesan cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Heat olive oil in a large skillet over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes, or until vegetables have softened.

Step 3

Add minced garlic and cook for 1 minute, until fragrant.

Step 4

Add ground lamb (or beef) to the skillet. Cook until fully browned, breaking it up into smaller pieces with a wooden spoon.

Step 5

Stir in tomato paste and cook for 1-2 minutes. This deepens the flavor.

Step 6

Add beef broth and Worcestershire sauce, and stir to combine. Bring mixture to a simmer and cook for 5-7 minutes, or until slightly thickened.

Step 7

Stir in frozen peas, corn, salt, and pepper. Remove the skillet from heat and set the meat mixture aside.

Step 8

While the meat filling cooks, place peeled and diced potatoes in a large pot of salted water. Bring to a boil and cook for 12-15 minutes, or until potatoes are fork-tender.

Step 9

Drain the cooked potatoes and return them to the pot. Add butter, milk, and Parmesan cheese. Mash until smooth and creamy. Season with a pinch of salt, if needed.

Step 10

Spread the meat mixture evenly in a 9x13-inch baking dish.

Step 11

Carefully spread the mashed potatoes over the meat mixture, smoothing it out with a spatula. Create small peaks with the back of a spoon for a textured look.

Step 12

Place the baking dish in the oven and bake for 20-25 minutes, or until the top is golden and bubbling.

Step 13

Let the shepherd's pie cool for 5-10 minutes before serving. Enjoy!
