Ingredients

  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 6 tablespoons Unsalted butter
  • 1 large Yellow onion, diced
  • 3 stalks Celery, diced
  • 2 Garlic cloves, minced
  • 12 cups Crusty bread, cubed (preferably day-old)
  • 2 cups Chicken stock (low sodium)
  • 2 large Eggs, lightly beaten
  • 3 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh sage, chopped
  • 1 teaspoon Fresh thyme, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil (for greasing baking dish)

Directions

Step 1

Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil and set aside.

Step 2

In a large skillet over medium heat, cook the Italian sausage, breaking it into small crumbles with a wooden spoon, until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside, leaving about 1 tablespoon of fat in the skillet.

Step 3

Add the butter to the same skillet. Once melted, add the diced onion and celery and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

In a large mixing bowl, combine the cubed bread, cooked sausage, sautéed vegetables, parsley, sage, thyme, salt, and pepper. Toss to mix evenly.

Step 5

In a separate bowl, whisk together the chicken stock and eggs. Pour the mixture over the bread mixture and gently toss until the bread absorbs the liquid. Let it sit for 5 minutes to ensure even absorption.

Step 6

Transfer the stuffing mixture into the prepared baking dish, spreading it out evenly. Cover the dish with aluminum foil.

Step 7

Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 20 minutes, or until the top is golden brown and slightly crisp.

Step 8

Remove from the oven and let it cool for 5-10 minutes before serving. Garnish with additional chopped parsley, if desired.
