Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, sliced
  • 2 cloves garlic, minced
  • 10.5 ounces cream of mushroom soup
  • 1 cup chicken broth
  • 0.5 cup sour cream
  • 0.5 teaspoon paprika
  • 2 large russet potatoes, thinly sliced
  • 2 medium carrots, thinly sliced
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch casserole dish and set aside.

Step 2

Season the pork chops on both sides with salt and black pepper.

Step 3

In a large skillet, heat the vegetable oil over medium-high heat. Sear the pork chops for 2-3 minutes per side until golden brown. Remove the pork chops and set aside.

Step 4

In the same skillet, add the sliced onion and sauté for 3-4 minutes until softened. Add the minced garlic and sauté for an additional 1 minute.
