Ingredients

  • 4 pieces (6 oz each) Salmon fillets (skinless)
  • 1 cup Panko breadcrumbs
  • 0.5 cup Pecans (finely chopped)
  • 0.25 cup Parmesan cheese (grated)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Honey
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

In a shallow bowl, combine the panko breadcrumbs, finely chopped pecans, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix well to combine.

Step 3

In a small mixing bowl, whisk together the Dijon mustard, honey, and 1 tablespoon of olive oil until smooth.

Step 4

Pat the salmon fillets dry with a paper towel. Brush the top side of each fillet with the Dijon-honey mixture, ensuring an even coating.

Step 5

Press each salmon fillet into the panko-pecan mixture, coating the top evenly. Gently press down to help the breadcrumb mixture adhere to the salmon.

Step 6

Place the coated salmon fillets on the prepared baking sheet, crust-side up. Drizzle the remaining 2 tablespoons of olive oil over the top of the fillets to ensure the crust turns golden and crispy while baking.

Step 7

Bake the salmon in the preheated oven for 12-15 minutes, or until the crust is golden brown and the salmon is cooked through (internal temperature should reach 145°F or 63°C). Cooking time may vary depending on the thickness of the fillets.

Step 8

Remove the salmon from the oven and let it rest for 2-3 minutes before serving.

Step 9

Garnish with freshly chopped parsley and serve with lemon wedges on the side for a zesty finish.
