Ingredients

  • 6 large eggs
  • 0.33 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 stalk (finely diced) celery
  • 2 tablespoons (finely chopped) red onion
  • 1 tablespoon (finely chopped) fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 leaves lettuce (optional)
  • 4 slices bread of choice

Directions

Step 1

Place the eggs in a medium saucepan and cover them with cold water. Ensure the water level is about 1 inch above the eggs.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, remove the pan from the heat, cover it with a lid, and let the eggs sit for 10 minutes.

Step 3

After 10 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes. This makes peeling easier.

Step 4

Peel the cooled eggs and place them in a mixing bowl. Use a fork to mash the eggs into small chunks, leaving some texture.

Step 5

Add mayonnaise, Dijon mustard, lemon juice, celery, red onion, parsley, salt, and black pepper to the bowl. Mix until well combined.

Step 6

Taste and adjust seasoning if needed, adding more salt or pepper to preference.

Step 7

Toast the bread slices if desired. Lay a leaf of lettuce on one side of each sandwich (optional).

Step 8

Spoon the egg salad mixture evenly onto two slices of bread. Top with the remaining slices of bread to complete the sandwiches.

Step 9

Cut each sandwich in half and serve immediately. Enjoy your delicious Dee's Egg Salad Sandwich!
