Ingredients

  • 1 head cauliflower
  • 225 grams shrimp
  • 225 grams crab meat (lump or imitation)
  • 1 medium red bell pepper
  • 2 sticks celery stalks
  • 0.5 medium red onion
  • 2 tablespoons fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Prepare the cauliflower by removing the leaves and cutting it into small, bite-sized florets. Rinse thoroughly under cold water.

Step 2

Bring a large pot of lightly salted water to a boil. Add the cauliflower florets and blanch them for 3-4 minutes until tender but still crisp. Drain and rinse under cold water to stop the cooking process. Set aside to cool.
