Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1.5 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 3 pieces Large eggs
  • 1 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 2 cups Grated zucchini (unpeeled)
  • 1 cup Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 8x4-inch loaf pans or line them with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt until evenly combined.

Step 3

In a separate medium bowl, beat the eggs lightly. Add the vegetable oil and vanilla extract, then stir until smooth.

Step 4

Gradually add the wet mixture into the dry ingredients, stirring just until combined. Do not overmix.

Step 5

Fold in the grated zucchini and chopped nuts (if using) until evenly distributed throughout the batter.

Step 6

Divide the batter evenly between the two prepared loaf pans.

Step 7

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the loaves comes out clean.

Step 8

Once baked, remove the pans from the oven and let the loaves cool in the pans for 10 minutes.

Step 9

Carefully transfer the loaves onto a wire rack to cool completely before slicing and serving.
