Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.5 cup Applesauce (unsweetened)
  • 0.5 cup Sour cream
  • 0.25 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Butter or oil (for greasing the pan)

Directions

Step 1

In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

Step 2

In a separate large bowl, beat the egg. Add the applesauce, sour cream, milk, and vanilla extract. Stir until well combined.

Step 3

Gradually incorporate the dry ingredients into the wet ingredients, stirring gently until just combined. Be careful not to overmix; the batter will be slightly lumpy.

Step 4

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

Step 5

Scoop about 1/4 cup of batter onto the hot skillet for each pancake. Spread the batter slightly using the back of a spoon if needed.

Step 6

Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges appear set. Flip the pancakes carefully and cook for another 2-3 minutes, or until golden brown.

Step 7

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 8

Serve warm with maple syrup, additional applesauce, or a sprinkle of powdered sugar, as desired.
