  • 3 tablespoons olive oil

  • 0.25 cup grated Parmesan cheese

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Wash the potatoes thoroughly and pat them dry. Using a sharp knife, slice thin slits ⅛-inch apart across each potato, making sure not to cut all the way through. Place a wooden spoon on either side of the potato to prevent the knife from cutting completely through.
