Ingredients

  • 200 grams dark chocolate (dairy-free, minimum 70% cocoa)
  • 400 milliliters full-fat coconut milk
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 120 milliliters aquafaba (liquid from a can of chickpeas)
  • 0.25 teaspoons cream of tartar

Directions

Step 1

Break the dark chocolate into small pieces and place it in a heatproof bowl.

Step 2

In a small saucepan, heat the coconut milk over medium heat until it just starts to simmer. Do not let it boil.

Step 3

Pour the hot coconut milk over the broken chocolate pieces. Let it sit for 1-2 minutes to allow the chocolate to melt, then whisk until smooth and glossy. Stir in the maple syrup and vanilla extract. Set aside to cool slightly.

In a large mixing bowl, pour in the aquafaba and add the cream of tartar.
