Ingredients

  • 6 tablespoons unsalted butter
  • 10 cups mini marshmallows
  • 6 cups crispy rice cereal
  • 1.5 cups semi-sweet chocolate chips
  • 0.5 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • 0.25 teaspoons kosher salt
  • 0 optional toppings (e.g., chopped nuts, flaky sea salt)

Directions

Step 1

Grease a 9x13-inch baking dish with butter or non-stick cooking spray and set aside.

Step 2

In a large pot over medium heat, melt the unsalted butter until completely liquefied.

Step 3

Add the mini marshmallows to the pot and stir continuously with a heat-resistant spatula until the marshmallows are fully melted and smooth.

Step 4

Remove the pot from heat and quickly stir in the vanilla extract and salt.

Step 5

Add the crispy rice cereal to the marshmallow mixture. Using a spatula, fold the cereal into the mixture until evenly coated.

Step 6

Immediately transfer the mixture into the prepared baking dish. Press it down gently with the back of the spatula to create an even layer. Do not overcompress, as this will make the bars tough.

Step 7

In a microwave-safe bowl, combine the semi-sweet chocolate chips and creamy peanut butter. Microwave in 30-second intervals, stirring well between each, until the mixture is smooth and glossy.

Step 8

Pour the chocolate-peanut butter mixture over the cereal layer, spreading it evenly with a spatula or the back of a spoon.

Step 9

If desired, sprinkle optional toppings such as chopped nuts or flaky sea salt over the chocolate layer while it is still warm.

Step 10

Place the dish in the refrigerator for 30 minutes to 1 hour, or until the chocolate layer is firm and set.

Step 11

Once set, remove the dish from the refrigerator and use a sharp knife to cut the bars into 16 squares or rectangles.

Step 12

Serve immediately or store in an airtight container at room temperature for up to 3 days.
