Ingredients

  • 225 grams dark chocolate
  • 175 grams unsalted butter
  • 6 large eggs
  • 180 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 50 grams all-purpose flour
  • 0.25 teaspoon salt
  • 1 tablespoon cocoa powder
  • 2 tablespoons powdered sugar
  • 250 milliliters whipping cream
  • 150 grams fresh berries

Directions

Step 1

Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

Step 2

Chop the dark chocolate into small pieces and melt with the butter in a heatproof bowl set over a pot of simmering water, stirring occasionally until smooth. Remove from heat and let it cool slightly.

In a large mixing bowl, whisk the eggs and granulated sugar until pale and doubled in volume, about 5 minutes. Stir in the vanilla extract.
