Ingredients

  • 1.75 cups All-purpose flour
  • 2 cups Granulated sugar
  • 0.75 cups Cocoa powder (unsweetened)
  • 1.5 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 large Eggs
  • 1 cup Whole milk
  • 0.5 cups Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 1 tablespoon Lemon zest
  • 1.5 cups Heavy cream
  • 10 ounces White chocolate, finely chopped
  • 2 tablespoons Fresh lemon juice
  • 8 ounces Dark chocolate chips
  • 2 tablespoons Unsalted butter

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy release.

Step 2

In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3

Add eggs, milk, vegetable oil, and vanilla extract. Beat the mixture on medium speed until smooth and well combined.

Step 4

Reduce the speed to low and carefully add the boiling water. Mix until the batter is smooth and thin.

Step 5

Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Step 6

Cool the cakes in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 7

To prepare the lemon ganache, heat the heavy cream in a small saucepan over medium heat until it starts to steam, but do not let it boil.

Step 8

Pour the hot cream over the chopped white chocolate in a heatproof bowl. Let it sit for 5 minutes, then stir until smooth.

Step 9

Stir in the lemon zest and fresh lemon juice until fully incorporated. Cover and refrigerate for 30 minutes, or until thickened but still spreadable.

Step 10

For the chocolate ganache frosting, heat the heavy cream (remaining 3/4 cup) in a small saucepan until steaming. Remove from heat and add dark chocolate chips and unsalted butter. Let sit for 5 minutes, then stir until smooth.

Step 11

To assemble the cake, place one cake layer on a serving plate or cake stand. Spread a generous layer of lemon ganache on top.

Step 12

Place the second cake layer on top and press gently to level. Pour the chocolate ganache frosting over the cake, letting it drip down the sides.

Step 13

Use a spatula to smooth out the top and sides, if desired. Allow the cake to set for at least 1 hour before serving.

Step 14

Slice and enjoy your Decadent Chocolate Lemon Ganache Cake!
